Roller Bar Mixers

Tilt-bowl horizontal mixers for bread and other yeast-raised doughs, in batch sizes from 400 to 3,200 lb.

Horizontal Mixing for Yeast-Raised Doughs

A good mix comes down to mixing time, aeration and dough temperature. CMC America’s tilt-bowl roller bar mixers are designed to get all three right, so you get a better dough at a lower cost per pound.

All CMC America mixers are USDA accepted, meet OSHA and ANSI standards, and can be manufactured to be FDA and CE conformant when required. We build them in Joliet, Illinois.

Fast Mixing, Less Energy

Our patented design improves the dough’s aeration and gives fast mixing times: as little as 5 to 7½ minutes per batch for many yeast-raised doughs. Shorter mixes use less energy.

Strong, Even Dough Development

The roller bars stretch, fold and develop the dough for a strong gluten structure and consistent dough from batch to batch. Our patented bowl and jacketing control dough temperature through the mix.

Built Around Your Operation

Every bakery is different, so we design each mixer around your operation, from standard models to fully custom systems. Electric drives can be set up for any plant, anywhere in the world.

Roller Bar Mixer Questions

What size roller bar mixer do I need?

Our standard sizes run from the 4SA (400 lb batch) to the 32SA (3,200 lb batch). The right size depends on your dough formula, its absorption and how many batches you need per hour. Send us those details and we’ll recommend a model.

How long does a batch take to mix?

Many yeast-raised doughs mix in as little as 5 to 7½ minutes. Your mix time depends on the dough.

How do you control dough temperature?

The bowl is jacketed. Our patented jacketing system helps hold your target dough temperature through the mix. Tell us your target when you ask for a quote.

Can the mixer feed our makeup line?

Yes. We also build custom dough transport systems that carry dough from the mixer to your divider or next process. See our transport systems.

What warranty comes with a new mixer?

New CMC equipment comes with a written warranty. Coverage depends on the part, so please see our Warranty and Terms (PDF).

Do you have used roller bar mixers?
